Menu Plan 26th November - 2nd December

This menu plan moves us into December which I'm still trying to get my head around.  I think I'll be in November for a little while longer before it sinks in.  

Due to many appointments during the week and a busy, busy weekend I've used quite a few freezer meals and leftovers where possible.  It made things so much easier and dinner was always organised and ready to go each night.

Sunday kicked us off with our Veggie Loaded Bolognese which was from the freezer.  Having the sauce already made was perfect as we had a lot of other things to do that day.  Turned out to be a very satisfying and Productive Sunday.

During the afternoon I also made these Wholesome Banana Sultana Cookies which are very tasty.

I used Best Recipes From the Backs of Boxes, Bottles, Cans & Jars for dinner on Monday  and made Hunt's 7 Layer Casserole.  So easy to just layer everything into a casserole dish and let the oven do the rest.  A complete meal in one as it has everything.

I won't be making this again however.  It was tasty enough, filling and economical however just didn't have the wow factor. 

Plenty of leftovers on Tuesday.  Extra pasta from Sunday night which the kids just love on its own.  On top of that the 7 Layer Casserole was finished.  Best part of all was Mum's Bread & Butter Pudding.  So good.

Wednesday evening was a very busy one so another freezer meal was used.  A Slow Cooker Lentil and Sausage Stew was simply reheated and served.

Another freezer meal on Thursday.  Our Chicken Noodle Soup is a favourite now and so, so good for you.    A No Knead Raisin Pecan Artisan Bread came out of the oven just in time for a snack later that evening.

That brings us to Friday and a little change from the traditional pizza night.  We have a small shop in town which has always intrigued me.  I finally ventured inside and found this amazing Scottish food.  The business is owned by a husband and wife who moved from Glasgow in 2001.  He makes his products just as he would back home.  I picked up some Cornish Pasties and a Pork Sausage Roll for dinner.  They were just so good.  Will be going back there again.

Cook on leave Saturday however kitchen is always open for DIY.  Well I did help a little bit this time.  As I was cooking a big batch of bolognese sauce I put a little aside which our son enjoyed on toast.  Our daughter very happily finished off the chicken noodle soup and my husband made toasted cheese sandwiches.  Once again all food used and no waste.  Happy with that.

Freezer meals certainly came to the rescue this week.   As per my post about A Quiet Blogging Week our menu plans will have a little rest however be back within the next few weeks.

    I hope you are well, I noticed you haven’t been posting for a while, just checking that you are okay. My darling sister has had the dreaded influenza and has been terribly unwell, I looked after her this week while she got better. Hope to hear from you soon.
