Strawberry Glazed Baked Donuts

Once again I've been having fun with my new donut pan.  These Cinnamon Donuts were just so scrumptious and a huge hit with my husband and kids.  I knew that your everyday iced donuts were going to be next.  There are so many recipes however I chose these Vanilla Glazed Baked Donuts as it has a smaller mix.  Just wanted to make sure they were what I was looking for before cooking up a storm.  Now I wish I had cooked up a storm as they are so good and are a very close resemblance to the ones you purchase.

I added a little strawberry essence to the icing which really finished them off well.  Coloured sprinkles on one side only just like we've seen in the shops.  

Strawberry Glazed Baked Donuts.

1 cup plain flour, sifted
⅓ cup caster sugar
1 teaspoon baking powder, sifted
½ teaspoon salt
28 grams butter, melted
1 egg, room temperature
100ml milk
1 teaspoon vanilla extract

Strawberry glaze
½ cup icing sugar, sifted
½ teaspoon strawberry essence
1 or 2 drops of red food colour - I used the gel
Pinch of salt
1 or 2 tablespoons milk 
Coloured sprinkles for decorating

Preheat oven to 175°C.  Grease a 6 cup donut pan and set aside.

Place the flour, caster sugar, baking powder and salt into a medium bowl and whisk together.

In a small bowl whisk the butter, egg, milk and vanilla extract together.

Add the wet ingredients to the dry and mix being careful not to over-mix.  

Spoon the batter into either a snaplock bag or piping bag.  If using a snaplock bag snip a corner off the bottom.  Pipe filling into the donut pan.

Bake for approximately 10 minutes.

Remove from the oven and let cool in the tin.  Gently tip them onto a cooling rack. 


Once the donuts are completely cool you can make the glaze.  Add the icing sugar, strawberry essence, food colour and salt to a small bowl and mix together.  Add one tablespoon of the milk.  Keep adding milk slowly until you have reached the desired consistency.  

Dip each donut into the glaze and return to the wire rack.  Decorate one side with coloured sprinkles.
