Menu Plan 8th - 14th October 2017

The kids have been back to school for a week now.  The time goes so fast.  I'm still back on the school holidays and trying to get my head around the first week back.  I better get a move on.

During the week I've tried some new and exciting recipes with such pleasing results.  Everyone has enjoyed their meals and they comment often on how much they love my cooking.  I thoroughly enjoy serving up delicious meals and having them enjoy.

We had a day out Sunday with a trip to IKEA as well as a very filling lunch.  Dinner only needed to be something light and our Egg & Bacon Pie was just perfect.  I used the eggs from our chickens, greens from our veggie patch and a mixture of herbs from our garden plus Mum and Dad's garden.

Our very own eggs, herbs and mix of greens.

A new recipe awaited for Monday night's dinner. Sausage and Mash Bake was a real winner.  It is also a good recipe for reheating if you need to make it ahead of time.

Tuesday night was a little bit of this and that heated at different times.  My husband was interstate until late evening and our son went straight to work from school.  He had reheated Sausage and Mash Bake when he got home later.  I popped some oven chips and the last piece of Egg and Bacon pie into the oven for our daughter.

Tomato sauce was then added of course.

I was really looking forward to Wednesday night's dinner as I made Chicken Kiev for the first time.  They are absolutely delicious.

Thursday was exciting as I made my very first batch of baked donuts using my new donut pan.  I wanted to start off with a simple recipe and a flavour the kids are familiar with seeing in the shops.  These Baked Cinnamon Donuts are so good.  I'm extremely happy with how they look and taste - just like the real thing.

Dinner was a yummy Pasta Bake followed by a donut of course.

I had plans for Friday as I really wanted to use some of our produce from the backyard.  We have excess eggs at the moment, quite a few cauliflower heads are ready as well as ample kale.  In the end I produced this Cauliflower, Mushroom, Egg & Bacon Casserole.

The kids had the rest of the pasta bake for afternoon tea Friday.  Being a cool, wet afternoon made a bowl of warm pasta bake even more inviting after school.  Pizzas followed for dinner and later the donuts were finished.

As I was heading to the city for a night with Mum Sunday I made a big batch of Veggie Loaded Bolognese on Saturday afternoon.  One half went into the freezer.

Sunday evening was then all ready to go apart from boiling the pasta.  Even though I was away I knew that my family were at home enjoying a homecooked meal and one of their favourites too.

Another week has started with a couple of new and old recipes being made and maybe some more donuts.  I'll just have to make time for those.

  1. I bought bacon and extra eggs today to make an egg and bacon pie later in the week. Such a great dish for dinner but also fantastic for leftover lunches. Delish! Meg:)
