Chicken Loaf - Bellini Recipe

Deli meat has always been popular here with everyone however I only buy it occasionally and prefer making my own.  Much healthier, tastier, cheaper and you can experiment with different meats and flavours. The Skinnymixers site has a wonderful recipe which is so easy and the results are fantastic.  I added cooked peas to this loaf as requested by our daughter however next time I will try sun dried tomato.  There are many different ideas for flavours or you can simply leave as per the recipe without the additions.

This recipe follows instructions using a Thermomix or Bellini.

Chicken Loaf.


Ingredients
500g chicken breast, cubed
10g olive oil
1 teaspoon garlic powder
1 teaspoon paprika
1 teaspoon salt
1 teaspoon honey

Add all of the ingredients into bowl and process until thoroughly minced and mixed together.  Approximately 1½ minutes, speed 5.

Spread a large piece of cling wrap on the bench.

Scrape the chicken mixture onto the cling wrap and flatten into a rectangle.  Add additional flavours.  I added cooked peas this time.


I pushed the peas in a little to making rolling easier.
 
Roll up tightly and tie both ends into a knot.  Lay a second piece of cling wrap onto the bench and roll once again.  Tie off the ends.



Give the bowl a quick rinse and fill with 1 litre of water.  Place the chicken roll into the large steaming tray and steam for 35 minutes on speed 3.

Allow the roll to rest for 10 minutes and then place into the fridge for at least 2 hours.  I left ours overnight.  Slice as needed and store in an airtight container in the fridge.
