Carrot Cake Oatmeal Cookies

The moment I found these cookies on Amy's Healthy Baking I thought of our daughter straight away.  She really enjoys these types of cookies and with the words 'carrot cake' in the title they had won me over.  The aroma while they were baking was really good too with the cinnamon wafting through the house.  We made these on a Sunday afternoon therefore perfect for school snacks.

Carrot Cake Oatmeal Cookies.

1 cup instant oats
¾ cup whole wheat flour or similar - I used wholegrain plain flour this time
1½ teaspoons baking powder
1½ teaspoons ground cinnamon
⅛ teaspoon salt
28g coconut oil, melted
1 egg, room temperature
1 teaspoon vanilla extract
½ cup honey or maple syrup - I used honey
¾ cup or 70g carrot, grated

Add the oats to a medium bowl.  Sift the flour, baking powder, cinnamon and salt into the bowl with oats and whisk everything together.

In a separate small bowl add the coconut oil, egg and vanilla extract mixing well.  Add the honey or maple syrup and stir until fully mixed.

Add the liquids into the flour mixture and stir until just combined.  Fold in the grated carrot.  Place bowl in the fridge for 30 minutes.

Preheat oven to 160°C and line a tray with baking paper.

Roll spoonfuls of mixture into small balls and place onto prepared tray.  Only flatten slightly.

Bake for 12-15 minutes.  They still need to be slightly soft in the centre so be careful not to over cook.

  Let them completely cool on the tray and then enjoy.
