Pasta Salad

I'll always remember being in the supermarket one day when the kids were very young and them asking for one of those ready made pasta salads from the deli.  They had tried it at a friend's home and said it was really good.  Instead of purchasing the pasta salad I collected ingredients to make up my own.  I promised that a homemade version would be even better.  They were skeptical so I knew I had a challenge ahead of me.  Thinking about flavours and picturing one of those deli salads I made a huge batch and they have loved my pasta salad ever since.  Phew, passed that one.

Tomorrow we are all getting together at my parent's house for Father's Day and I'm bringing along two salads.  My pasta salad is one of them.  This makes a very large batch which works so well here as there is plenty to share tomorrow and then ample leftovers for everyone.  When the kids are hungry they can dish up a bowl of pasta salad which is good for them, fills them up for longer and is delicious.

Pasta Salad.

Ingredients
3 cups dried macaroni pasta, cooked
7 strips of middle bacon, cooked and chopped
1 cup cucumber, diced
1 punnet cherry tomatoes, halved
6 spring onions, sliced
1 teaspoon dijon mustard
2 tablespoons white wine vinegar or balsamic
½ cup mayonnaise, homemade if possible
Cracked black pepper to taste

Place the cooked macaroni and bacon into a very large salad bowl and mix.  Cover and place in the fridge to cool.

Once cool add the cucumber, cherry tomatoes and spring onions.  Mix well.

Tasty even before the dressing.
 
In a small bowl whisk the dijon mustard, white wine vinegar, mayonnaise and black pepper together.




Pour over the salad and mix well.  

I find mixing the dressing through the salad the day before gives it even more flavour.  

Now I need to get onto the second salad which is another winner as far as the kids are concerned.  Our daughter then needs the kitchen to do some baking ready for tomorrow.  Busy kitchen once again.
