Lemon Date Balls

When you find yourself with some leftover almond pulp from making a batch of Almond Milk this little recipe is so quick, easy and tastes good too.  Great for school lunchboxes.

The original recipe uses hazelnuts however I only had walnuts and they worked well.  I think any type of nut would be fine and a mixture would be good too.
 
Lemon Date Balls


Ingredients
2 cups pitted dates
1 cup wet almond pulp 
2 cups walnuts
Zest and juice of 2 lemons

1 cup desiccated coconut for coating


Place the dates into a bowl, cover with water and soak for approximately 2 hours and then strain.

Put the dates, almond pulp, walnuts, lemon zest and juice into a food processor and process until crumbly.  Try not to process too much as you want a little bit of texture.

Roll into bite sized balls.  Spread the coconut onto a plate.  Roll the balls into the coconut to coat.  Have a taste test and then store in the fridge.

  2. I use the cheapest dates I can find Maria. This time it was a Coles brand. That's why I soak them. If you use the soft medjool dates there isn't a need to soak just a hefty price.

    1. You can pretty much put any flavour combinations in and then just balance the texture. Dates a certainly a must though.

    1. Our daughter just packed a couple into her lunchbox. As my rolling methods are not up to scratch the sizes are different. She has two of the biggest of course. I would probably do the same 🙂.
