Butter(less) Chicken

I've been making this version of Butter Chicken which I found on the Stay At Home Mum site for many years.  As it had been a while I decided to make it for everyone's dinner once again and they just love it.  

A good weeknight dish as it is made fairly quickly and easily.  We've had it served with greens and sometimes rice however this time I served it with cauliflower rice and it was the perfect accompaniment.

I've also been eyeing off a recipe on the Quirky Cooking site for a long time now.  Chicken, coconut, cauliflower rice are perfect combinations I believe and I look forward to trying this new recipe next time.  If it is successful I will have two versions of Butter Chicken in my folder to alternate for something different.

I will then be on the lookout for a Butter Chicken recipe which actually has butter in it.  Hopefully I'll end up with three different versions, we shall see.

Butter(less) Chicken with Cauliflower Rice

1kg chicken thighs, diced
1 brown onion, diced
2 cloves garlic, crushed
½ teaspoon ginger, finely chopped
1 teaspoon cinnamon
1 teaspoon dried coriander
1 teaspoon tumeric
1 teaspoon ground cumin
2 teaspoons paprika
6 tablespoons tomato paste
2 tablespoons cornflour
2 cans evaporated milk - homemade if possible

If making your own evaporated milk you will need to prepare it early to give it time to cool.  You will find the recipe for evaporated milk on Rhonda's Down to Earth blog.

Heat a little oil in a large frying pan.  Add the chicken, onion, garlic and ginger stirring until the chicken is almost cooked.

In the meantime mix the evaporated milk in a medium bowl with the cornflour until all lumps have dissolved.  Set aside.

Once the chicken is almost cooked add the cinnamon, dried coriander, tumeric, ground cumin and paprika to the frying pan and stir well for one minute.

Add the tomato paste and mix well.

Add the combined evaporated milk and cornflour and continue to stir whilst it heats through and thickens.

Once boiling and slightly thickened remove from the heat and serve over cauliflower rice.
