Beef Macaroni

I'm just so, so excited to be able to share this wonderful recipe.  My parents were both such hard workers when we were growing up.  Dad would work all day and at times Mum would go to work of an evening once Dad arrived home.  One of the dishes which we had when Mum was working was Beef Macaroni.

I've never made it since leaving home.  There are many versions I've found on the internet however I really wanted to replicate the one Mum and Dad made.  Over the weekend the three of us put our heads together and came up with the ingredients by memory.  The only part which had us stumped was if it had tinned tomato or tomato soup.  Mum kept saying 'I'm sure it was tomato soup' so I went with that.

As I moved through the recipe certain smells were bringing back memories.  Then it was time for the final taste test and I knew it was the one.  I rang Mum and Dad straight away and said 'we did it.'

The kids loved it so much I'm now wondering what took me so long.  It was such a joy to dish this up to them and I shared some of our best 'Beef Macaroni Night' stories with them.

Beef Macaroni


Ingredients
250g macaroni
4 rashers bacon, diced
1 brown onion, finely diced
2 green capsicums, diced
1kg minced beef
1 x 425g can condensed tomato soup

Cook macaroni as per instructions on packet.  Drain and set aside.

Meanwhile add a little oil to large a frying pan and cook the bacon for 2-3 minutes.  Add the onion and capsicums.  Continue to cook and stir for another few minutes.  Add the mince and brown well.

The memories started coming back even at this stage.

Stir through the tomato soup and cook until the mixture begins to boil.




Lower the heat and stir through the macaroni.


All ready to be served.


 Simple and delicious.

  4. Oh, this sounds wonderful and easy to make! My mom used to make something similar called Aunt Liz's goulash. I think hers had cottage cheese and Ragu tomato sauce. Sometimes we put corn in it, too. The bacon sounds delicious!

      The bacon and green capsicum really make this dish. Well that's how I've always seen it anyway.
