Fried Rice

Another recipe which is quick and easy for a weeknight dinner is fried rice.  I keep coming back to this recipe and do make it quite a lot as it is another favourite here.

Fried Rice.

I found the recipe years ago on the Taste website when searching for ideas for family dinners and use it all the time.  

Cooking the rice the day before will give this dish a much better texture.  Having the rice cooked and sitting in the fridge overnight gives it a chance to dry a little and therefore separates easily for the fried rice.  The other benefit is that it makes the recipe that much quicker and easier to prepare the following day.  Dinner is ready in no time at all.

There are plenty of different variations for fried rice but here is the one we love.

Ingredients:
1 cup rice
2 eggs, whisked
2 bacon rashers, chopped
1 carrot, grated
2 shallots, finely sliced
1/2 cup frozen peas
1/2 cup frozen corn
3 tbls tamari sauce (plus extra to serve - optional)

Cook rice the day before and store in the fridge.

Heat some oil in a large frying pan or wok.  Add eggs and swirl over base of pan.  Cook until set and easy to turn.  This should only take a few minutes.  Flip over and cook for another few minutes.  Remove from pan and cut into short strips.  Set aside.

Add bacon to pan and cook until golden.  Add the grated carrot and stir fry for 1 minute.  Now add the shallots, peas, corn and rice.  Mix thoroughly whilst cooking for 5 minutes or until completely heated through.  Add the egg and tamari sauce and continue to stir.

Serve immediately.

  1. Fried rice has been one of my favourites since I was small. My mum used to cook up a big batch, with lots of veg in it, and we'd have it with soy sauce. Delicious! Meg:)
