A Little Bit of Easter Fun

After such a beautiful warm sunny day yesterday we now have a very cold and wet Sunday.  Hard to believe that we were wearing shorts and t-shirts yesterday and spent most of the day gardening and working on our chicken coop.  Today sees us wearing our winter clothes and huddling indoors.  It has been raining off and on for most of the day and also very windy.  Perfect baking weather.

I woke up this morning and knew straight away that I wanted to bake with our daughter so started thinking.  Out comes my new library book 'How to be a Domestic Goddess' by Nigella Lawson.  The cupcakes looked good.  After a brief scan of the internet I found the perfect way to decorate the cakes.

 Easter Egg Cupcakes

Once everything was done in the morning we then started our baking.  The first thing was to make the cupcakes.  The mixture was so silky and smooth and the cakes turned out beautifully.  Baking on a cold, wet day is really cosy with the lovely baking aromas and warm kitchen.

Now for the really fun part.  We made them into little Easter Egg cakes.  The little eggs on top are filled with chocolate.  Of course our daughter had to try a few of the eggs for quality control.

Our little assembly line all ready to go.

We had so much fun making these.  The actual cake itself is a lovely mixture and we are so happy with how the decorations look.  We keep looking at them and admiring.

Such a great day together and another we will remember for a long time.
